Easy From Scratch Cookies: Chocolate Stamp Cookies.

Cookies will always be one of my favorite things to make myself at home. The famous Nestle Toll House cookie recipe was actually the first thing that I ever learned to make on my own without help from my mom- and that recipe remains a favorite of mine today. In addition to the Toll House cookies, I have a few other cookie recipes that are tried and true. Some are a bit more time intensive, and some are quick and easy, like today's recipe!

I've been wanting to share these Chocolate Stamp Cookies for years now on the blog. I made some a couple weeks ago and made sure to snap a photo so I could finally do this blog post. 😊

I've been making these cookies for well over a decade now. I much prefer soft cookies to crunchy ones, and these are like the ultimate soft and fudgy treats. They aren't the sweetest cookies, but sometimes you don't want a cookie that's too super sweet. They're just perfect I think! And the best part of all is how easy they are to make. These are the ideal cookies for when you want something homemade quickly, or perfect to whip up (in pre-COVID times) if you're having someone over on short notice and want a treat to serve them.

The recipe isn't my own creation. I actually learned how to make these in a cooking class that I took in middle school! There is a kid's cooking school in my home state of Maine called Measuring Up Cooking For Kids. I did a week-long summer day camp there one year in middle school, where we learned how to make all sorts of fun recipes. To this day, I still have a big binder I was given at camp with recipe cards for all of the meals and treats we learned! Out of all of them, this one has by far been my favorite.

Ingredients:
  • 1/2 cup Butter
  • 3/4 cup Sugar
  • 1/3 cup Cocoa powder
  • 1 Egg
  • 1 Tbsp. Milk
  • 1 tsp. Vanilla extract
  • 2 cups Flour
Instructions:
  1. Preheat oven to 350.
  2. Cream butter, sugar and cocoa in mixer. (Hack: if you don't have a mixer, you can also mix everything by hand if you slightly melt the butter in microwave before mixing.)
  3. Beat in egg, milk and vanilla.
  4. Add flour and mix until well blended.
  5. Drop dough by the spoonful  onto baking sheet- each spoonful should be about 2 inches big. (Place these 3-4 inches apart). Press them lightly with the bottom of a small glass- don't do it so much that they're completely flattened. (Hack: you can also add sugar sprinkles on them at this point if you would like!)
  6. Bake for 8 minutes, then remove and place on wire rack.

Enjoy!! Feel free to leave a link for your favorite easy cookie recipe in the comments!
